Thenkuzhal Murukku | Diwali snack recipes

Thenkuzhal murukku is a very popular dish in South India. We used to make it for Diwali festival. The texture of murukk is crunchy and it tastes so nice.

Murukku recipe

Ingredients:


Rice flour - 2 cups

Urad flour- 1/2 cup
Butter - 3 tbsp (at room temperature)
Sesame seeds - 1 tsp
Hing - a pinch
Hot water - 1 cup
Salt to taste
Oil for deep frying

Yield : 15 - 18 Murukku


Preparation time - 5 minutes

Cooking time -  25 minutes

Method:



Easy murukku recipe

1. Take all the ingredients (except water) in mixing bowl. Mix it well.


2. Add water little by little and mix to attain dough right consistency.


3. Divide the dough into 6 equal cylindrical portion.


4. Heat oil in wide pan.


5. Take murukku press and plate (back side) , grease it well with oil.


6. Now add one cylindrical portion into the murukk press and press it slowly in form of circle.


7. Slide the murukku dough into heated oil ( test oil by adding a pinch of dough in it. If it rises immediately, then oil is ready to fry).


8. Fry them on both sides until it turns to golden brown colour.


9. Drain excess oil in paper towel and once it cooled down, store it in air tight container.

Diwali is all about Sweets and Sweet Memories

Diwali is just around the corner. All of my family members are so excited to celebrate it in a grand manner. In my native, a month ago, all the shops were decorated with colourful serial lights. I am eagerly counting the days for grand celebration.

How we prepare for Diwali celebration in our home:

When I think about Diwali festival, first thing which strikes my mind is new dress :). Every year two weeks ahead of Diwali, we used to do Diwali dress shopping. We don't like to do shop in last minute, because the bazaar will be so crowd and more than that all good pattern and latest trendy dress might sell that time. This year also we finished our shopping a week ago.



Next thing which come to mind is everyone's favourite yummy sweets and savouries :) In our home, we never buy sweets from shop. Every year we make Diwali sweets at our home.  My grandma comes to my home to help mom for Diwali sweet preparation. She is a great cook (I am learning cooking from her now). I and my two sisters likes to do some help like rolling, mixing the murkku dough, but my mom never allow us to go near the oil pan. While making sweets, we sit around and my grandma shares her childhood memories with us. It is always one of unforgettable moments in my life. The sweets which we prepare for Diwali is rice flour murruku, sweet murruku, mullu murruku, guava leaf murruku, gulab jamun, adhirasam, rava laddu, seeni urunda, Mysore pak etc., .During Diwali, we share sweets with our relations and neighbours. Hence we make 100 numbers in each sweet and savoury dish. 



Gulab jamun is one of my favourite sweet delicacies. It is so delicious and simple to make. From last year, I make gulab jamun using left over breads. It tastes as same as normal milk powder gulab jamun. I would really love to share the simplest recipe. The ingredients you will need
For making bread gulab jamun is
8 bread slice
1/2 cup milk
Oil for deep frying 
For making sugar syrup
1 cup sugar
1/2 cup water
A pinch of cardamom powder 
A pinch of saffron strands 

Method for making jamuns:


First, cut the brown edges of bread and dip the bread in milk. Then squeeze out the extra milk. Repeat the same for other breads. Now take breads in blender and grind it into smooth paste. Divide equal portions and make balls. Heat the oil in pan over lower flame. Drop each ball into the heated oil, fry them well until it turns to golden brown colour. Drain the excess oil in paper towel. Let them warm for some time.



Now for the sugar syrup, take sugar and water in large saucepan, mix well and cook it on lower flame. When it forms single string consistency, remove it from the flame and add saffron strands and cardamom powder. Once the sugar syrup cools down, add jamuns into it. 



Let it soak for 4 hours to get soft and smooth texture. It's done :) simple isn't it?? I hope this recipe will help you all for the last minute sweet preparation.

Last but not least, Fire crackers :).  Actually we buy it on a day before Diwali that's why I couldn't upload my own fire crackers image. We love different colour sky shot. That is in top of my fire cracker list.

How we celebrate Diwali:

The day before Diwali night, we sisters never sleep. We do chatting, playing card games, watching Diwali special television show. At 12 o clock, we wish everyone in our family and we start sweeping our home entrance for big rangoli kolam. Then my dad applies small drop of segaikai (powder herbal shampoo) and oil on head. It is one of traditional custom during Diwali festival. My mom will be very busy in arranging all the sweets, pooja items and cloths in pooja room. After aarathi my dad gives us new clothes. We happily go and wear it. After 10 o clock, we visit our friends and relations home to share Diwali wishes and sweets. The whole day we spent time firing crackers, visiting relations home, watching TV, eating loads of sweets. Diwali is one of my very favourite festivals. Now, I'm eagerly counting days for Diwali celebration.

Penne Pasta with Vegetables - Kids  Lunch box Recipe

This dish is an easy, well nutrition and stomach filling meal. It is my daughter's favorite pasta dish. She likes the cheesy flavor and colorful veggies. It is perfect for school lunch.  Do try this for your kids, they will definitely like it. I am sending this recipe to Lunch box recipes conducted by Indusladies.


Ingredients:

  • 1 cup Penne pasta
  • 1/2 cup Broccoli florets
  • 1/2 cup Carrots, cut into strips
  • 1/4 cup Green peas
  • 1/4 cup Fresh corn
  • 1/4 cup Milk
  • 2 tbsp Cheddar cheese, sheddred or powdered
  • 1/4 tsp garlic powder or 3 garlic cloves, chopped finely
  • 1 tsp Ground pepper
  • 1 tsp Oil
  • Salt as required
Serves : 2 Kids

Instruction:



1. Wash all the veggies in running water.

2. Heat a tsp of oil in wide pan over medium-low heat. Add all the veggies, garlic powder, salt and pepper. 

3. Mix well, close the lid and cook until the veggies cooked well.



3. Meanwhile, cook the pasta in another pan according to the packet instruction. Drain well and put it back to the pan.

4. Add milk and cheese, cook untill it thicken.

5. Now add the cooked veggies to pasta, toss it well and remove it from the flame.

Make cute Baby Hats from Old Tank tops, T-shirts and Sweaters

Last week I made this cute hat for my little one. The method of making is very simple, hence I wanted to share it here. Use your baby's or toddler's old Tee, Tank top or Sweaters to make this hat for your kids. They will feel warm and more comfortable during this winter.

P.s: I have created a new page "DIY"in this blog. From now, I will share some simple crafts over there (DIY page). I always need your wonderful support :)

Things needed: 
1 Toddler/Baby Tank top ( you can also use old Tee or Sweater)
1 Scissor
Thread and needle
Fabric flowers for decoration 

Instruction:


Cut off the body of tank top from one armpit seam to the other armpit seam.

Now measure your baby's head circumference and cut according to the measurement.


Turn the body of tank top inside out.

Push the needle with thread where you want to start and bring the needle back through both layers of fabrics just in front of the previous stitch. Repeat the stitch until you reach the other end of hat.

Once it done, turn the hat. ( Its ready to decorate now)


Turn the hat inside out and stitch the fabric flowers.

To make it look more gorgeous you can also add beads, fancy laces and buttons.

Easy Pumpkin Soup




A fine, silky smooth textured soup, topped with natural yogurt and dried oregano.

Serve: 4 Adults

Difficulty: Easy

Ingredients

  • 1 pound Pumpkin
  • 1 cup Onion, finely chopped
  • 1 1/2 cup Chicken broth / Vegetable broth
  • 1/2 tsp cumin seed
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil
  • 1/4 tsp dried oregano
  • dallop of plain yogurt

Instructions:

Chop the pumpkin

1. Peel the skin and discard it.

2. Cut the pumpkin flesh into small chunks and keep it aside.

Making of soup



1. Heat oil in large saucepan over medium-high flame.

2. Add cumin seeds to the heated oil. When it starts to splutters, add chopped onion and sauté until it turn to translucent.

3. Add pumpkin chunks, mix and cook for couple of minutes.

4. Now add broth, oregano and garlic powder. Mix all well, close the lid and cook it in simmer for 30 minutes.

5. After 30 minutes, remove the pan from flame and let it slightly cool for sometime.

Blend them...



1. Take the pumpkin mixture into blender and blend it in high speed untill smooth. (or you can use hand blender)

How to serve


1. Laddle soup into serving bowl.

2. Top with dallop of yogurt, sprinkle some dried oregano and serve with toasted bread.

Ingredients
  • 1 cup moong beans
  • 1/2 cup carrot, grated
  • 1/4 cup cucumber, chopped
  • 1/4 cup onion, chopped
  • 1/4 cup tomato chopped
  • 1/2 tsp lemon juice
  • Salt & Ground pepper for seasoning
Instruction

How to Sprout Moong Beans

1. Wash moong beans in fresh water and soak it in enough water for 8 hours or overnight.

2. Drain the water and keep the swelled beans aside.

3. Take clean cloth or kitchen napkin. Wet it in water and squeeze out extra water.

4. Add moong in the cetre of damp cloth. Gather the edges of the cloth and tighten it.

5. Place that in closed container for a day.

6. Next day, you will see small sprouts from the moong beans. If you want longer sprouts, you can keep it for one more day.

7. For making salad, combine all ingredients in mixing bowl and toss it well.

8. Healthy salad is ready to serve.
